Sorry for the delay in posting the recipe, but I forgot.
150g/6oz butter (anchor) left out for 24 hours to soften.
150g/6oz caster sugar
a big shake of vanilla essence
2 eggs (fresh farm very large eggs)
1 tsp level baking powder (gluten free)
1 tsp level xantham gum
150g/6oz plain flour (doves farm)
3 - 4 tbsp milk
1. Cream butter and sugar together - until very soft & add vanilla essence and mix (until you are even more knackered.)
2. Mix the eggs into the mixture one at a time.
3. Add the flour (sifted), baking power (sifted) and xantham gum (sifted) and finally the milk.
4. mix everything together and divide mixture into 2 20cm/8" baking tins (pre-greased and lined with greased baking paper).
5. Bake in pre-heated oven 170degrees C fan oven, (190C normal & 275F or gas 5 - I think) for 15-20mins till brown & firm.
6. Turn cakes out onto wire rack to cool.
7. Then do whatever you want to them.
